A good argument in this vein when telling people about this idea is to talk about fractals. The famous Mandelbrot set has literally uncountably infinite complexity, but arises out of very simple rules, and then ask them to characterize the difference between the abstract set of complex numbers and the rules defining it (barring model theory).
