The "hold it" gesture, palm forward to the other person, works both for "let me finish what I'm saying" and "hold on and let me process what you've just said".

I prefer index finger up, as in '1 second please', especially combined with a concentrating look.

'Hold it' seems like a bigger command than asking for a few moments.
